MICHELIN STAR CHEF, TOMEU CALDENTEY, TO HEAD UP RESTAURANT

The luxury Boutique Hotel Sant Jaume will open in the heart of Palma’s old town this month and will be the fourth hotel to be opened by the IT Mallorca Unique Spaces Group headed up by Miguel Conde Moragues. The hotel features 36 rooms and suites becoming the largest property within the group joining the historic “palacio” Boutique Hotel Can Cera (opened in 2011); Boutique Hotel Calatrava located beside the ancient city walls overlooking the Bay of Palma (opened April 2013) and Boutique Hotel Can Alomar (opened in May 2014) on Palma’s Borne boulevard.

Boutique Hotel Sant Jaume is located on one of Palma’s most ancient streets nestled between two 15th century gothic buildings; the Sant Jaume Church and the Santa Magdalena Convent. The hotel building is the refurbishment of a mansion dating back to the 18th century which is ideally located a few minutes’ walk from Palma’s main Borne Boulevard and Jaime III shopping street, both of which have become synonymous with international designer shopping, elegant cocktail bars, lively cafes and restaurants.

The reception area, hallway, lobby, restaurant, cocktail lounge and spa will be located on the ground floor with 36 bedrooms and suites distributed on the four floors above. The exclusive Suite San Jaume will be located on the top floor with its own large terrace. The fourth floor features a sundeck with plunge pool and views across the old quarter to Palma Cathedral. The interior design combines a stylish contemporary style with the historic exteriors of the building and the surrounding area.

A main feature of the hotel is its “Tomeu Restaurant amb Arrels” restaurant headed up by Mallorca’s first Mallorcan Michelin star chef, Tomeu Caldentey. Caldentey was awarded his first Michelin star in 2004 for his restaurant “Es Molí den Bou”. His passion for local cuisine forms the concept for the new restaurant creating classic Mallorcan dishes with local produce. Once a week, guests can book the special “Tomeu’s Table” to watch and experience him work preparing lunch/dinner at their table.

The “BarTomeu Marcerados & Co” revives the tradition of an age old technique of maceration: (the method of producing a flavoured alcoholic beverage, such as cordials and liqueurs) using only natural products. The bar offers a classic range of cocktails with a personal touch in a range of colours and infusions.

The spa area features a selection of treatments with the option of booking private yoga and Pilates classes. The fully equipped fitness area is located on the first floor. In addition, the hotel has devised a running route beside the sea for enthusiasts and a personalised training service will also be available.

Says Miguel Conde Moragues, owner of IT Unique Spaces Group;” The success and demand for our existing boutique hotels in Palma helped us to channel all our “know how” and experience into Boutique Hotel Sant Jaume to create what we believe will be Palma’s most stylish hotel to date. Gastronomy will be at the forefront of the hotel with the skilled hands of Michelin star chef, Tomeu Caldentey, who will create an enticing and exciting dining and tasting experience in the hotel’s restaurant and maceration lounge bar”.

Room rates start from 199€ per night, in a deluxe room, to include local tax.
